I've used filtered water to make my water kefir, and it's worked out well! You totally should! If you're interested, I can mail you some water kefir grains when mine start to multiply. I don't think you need too many. I really love this stuff because it's made me feel wonderful. I am truly amazed. Let me know if you want me to send you some water kefir grains! I'm renewing my interest in Nourishing Traditions-type stuff and I think I might start giving these kinds of things a try! Will let you know if I do.
